I wanted to thank you for linking to my slow cooker site! I had an absolute ball with the project, and learned an awful lot about meal planning and cooking through the process. Thanks again.

Strangely enough, I started menu planning with breakfast instead. Dinner seemed so open to so many possibilities, it would be hard to narrow them down. For me, I just wanted to have breakfast stocked and ready to go in the morning. At least fed us 1 meal before having to go to the store for that forgotten item.
Now, I am working on planning drinks and non-grocery musts and want to get lunch and dinner together too.
Another resource is a book from our library called Once-A-Week meals.

A favorite Leftovers meal for us is “Big Tex Wraps”.
It’s fabulous for a fresh option any time you’ve made chicken or beef and mashed potatoes.
Grilled (or leftover) chicken or beef
Mashed Potatoes
Vegetables: red onion, red or green pepper, zucchini, yellow squash, or any combination thereof, lightly sauteed
Corn Salsa or canned corn or frozen corn
Fresh Cilantro
BBQ sauce
Tortillas
Pile it on and wrap it up.
