Cooking 101: Mini Meatloaves

Last week, I had Mini Meatloaves in my menu plan here.  I made them using our deer meat and they were so good!  I totally improvised on this dish, so feel free to use your standard meatloaf recipe and do it in the mini muffin pans with your favorite toppings!

I serve these with mashed potatoes and sugar snap peas.

Mini Meatloaves

1 lb ground meat (beef or turkey)
1 egg, beaten
1/3 cup oats
1/2 cup salsa
2 T ketchup
1 T mustard
1 garlic clove, minced
salt and pepper

Toppings:
Ketchup
BBQ Sauce and Cheddar Cheese

1.   Mix all ingredients, except for toppings, with hands, until mixed (don’t overmix). Put into mini muffin tins.

2.  Make a small indention, and fill with your favorite topping. Add cheese 5 minutes before done.

3.  Bake at 375 degrees for 30 minutes.

Oooohhh, I like this idea! I have not made meatloaf in some time, but this would make it “fun” especially for my 9 year old. And I have plenty of free/cheap Green Giant frozen veggies in the freezer to serve these with!
