In my meal plan last week, I promised you the Crock Pot Herbed Pork that my friend Christina gave me. This one is a keeper: It is the BEST crock pot pork recipe I have ever made. Sorry for the delay in getting it to you, but on the plus side, I think you’ll find it was worth the wait. The word for this recipe is succulent. The combination of herbs and spices connect in the most flavorsome way. It’s a crowd pleaser–that’s for sure–whether the crowd is your church group, your family, or an intimate “crowd” of two for a special date night at home.
- 2-3 lbs of pork loin or shoulder/butt roast (loin is leaner, shoulder is like pulled pork, much more tender, but more fat)
- 2 cups white wine or chicken broth (the alcohol cooks off and this tastes amazing!)
- 2 T melted butter
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp dried mustard
- 1 garlic clove, minced
- 1/2 tsp salt
- Mix melted butter and spices to make a rub.
- Put pork into crockpot and rub with mixture.
- Pour in liquid.
- Cook on low for 8 hours.
