In my meal plan last week, I promised you the Crock Pot Herbed Pork that my friend Christina gave me.  This one is a keeper: It is the BEST crock pot pork recipe I have ever made.  Sorry for the delay in getting it to you, but on the plus side, I think you’ll find it was worth the wait. The word for this recipe is succulent. The combination of herbs and spices connect in the most flavorsome way. It’s a crowd pleaser–that’s for sure–whether the crowd is your church group, your family, or an intimate “crowd” of two for a special date night at home.

Crock Pot Herbed Pork

Prep Time: 15 minutes

Cook Time: 8 hours

Total Time: 8 hours, 15 minutes

Yield: 10-12

Crock Pot Herbed Pork

Ingredients

  • 2-3 lbs of pork loin or shoulder/butt roast (loin is leaner, shoulder is like pulled pork, much more tender, but more fat)
  • 2 cups white wine or chicken broth (the alcohol cooks off and this tastes amazing!)
  • 2 T melted butter
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp dried mustard
  • 1 garlic clove, minced
  • 1/2 tsp salt

Instructions

  1. Mix melted butter and spices to make a rub.
  2. Put pork into crockpot and rub with mixture.
  3. Pour in liquid.
  4. Cook on low for 8 hours.

I can’t claim credit for this recipe- it actually comes from Kim Blair who brought it to me as a yummy baby meal after Wesley was born. It’s my favorite pork recipe!!
