Pinto Beans

These are the easiest thing to make and you can freeze them to use for later.  I like to try to get two meals out of them and then mash the rest up and freeze in 1 cup increments to use as “refried beans.”

So easy, here is all you do….

Pinto Beans

Cook Time: 2 hours, 30 minutes

Pinto Beans

Ingredients

  • 3 cups dried beans
  • 3 strips bacon, diced
  • salt & pepper, to taste
  • Optional:
  • diced onions
  • chili powder
  • cumin

Instructions

  1. Soak beans overnight, cover with water and let sit 6-8 hours. Rinse and refill with water about 1-2 inches above top of beans. (You don't have to soak them overnight unless you just want to. Read my instructions for How to Prepare Dried Beans HERE.)
  2. Add bacon and put on stove on high, covered. Once boiling, bring to a simmer for 2-3 hours. I found 2.5 hours was best, 3 was too much, they got mushy.
  3. Once they are cooked through, add your seasonings.
  4. Serve with sour cream, pico di gallo, cheese or whatever you like!

i was wondering if you could tell me how to cook pinto beans in a crockpot? i like pinto beans and cornbread but i have trouble fixing the beans so that they are not dry and crunchy. thanks for your help.
