    I am going to make Quinoa Salad tonight. The one I am making has ham, black beans, corn, peppers, italian dressing, etc… It is very light and healthy and can be eaten hot or cold.

    kelly, i make a southwestern chicken spaghetti….when cooking the chicken in a skillet i add either some taco seasoning or fajita seasoning…instead of celery…i add in a green pepper, red pepper onion mixture and cook with chicken……in addition to adding some cream of chicken soup i add in some sour cream to make it creamy i add my noodles……i put all in a casserole dish and top with monteray jack cheese or whatever cheese i have that sounds southwesterny….i don't have an exact recipe b/c i make it up as i go along…but it's pretty good and adds some pizazz to regular chicken spaghetti….

    Chicken paghetti:

    Chicken, (I do an entire chicken or ~5-6 breasts)
    Chicken bouillon
    Large onion, chopped
    Large bell pepper, chopped
    One half stick butter/margarine
    One can Rotel tomatoes, chopped if desired
    One pound cheese
    One pound spaghetti

    I cook chicken I am using on the stove with water and lots of chicken bouillon.
    I chop and saute’ one large onion and one large green pepper in butter.
    When chicken is done, remove and let cool, chop or shred. DO NOT discard water! Cook spaghetti in it.
    Combine all ingredients, breaking cheese into smaller chunks so that it melts as hot ingredients are added. Bake at 350 about 20-30 min, til hot and bubbly.
