Ginger Carrot Salad

I usually make this when I find organic carrots on sale.  I incorporate it into my meals throughout the week as our fresh vegetable. It is really easy but the fresh ginger dressing which is a little pricey is totally worth it, and it makes the salad

Ginger Carrot Salad

3-4 carrots, shredded (with blade or vegetable peeler)
fresh ginger dressing (jarred)

Combine carrots and dressing and serve! So easy.

walmart – mt. juliet had organic carrots for .88 a bag a couple of weeks ago. not sure if it was a “sale” or just a regular roll-back price.

What is in the “fresh ginger dressing”? I’d like to try to make it myself.
