I have made Escalloped Cabbage from Ree Drummond (Pioneer Woman)’s website and it is delicious!! One of the best cabbage dishes ever! I usually use shredded cheese instead of cheese whiz, green chiles instead of jalapenos, and cream of whatever soup I have on hand.

I like to take some bacon, crisp it up and set it aside…in the same pan, fry an onion til soft (but not mushy) and brown…remove the onion, and in the pan now melt some butter and fry the cabbage til tender…add all ingredients back, toss with some egg noodles, add fresh parsley and salt and pepper to taste…comfort food at its best…well, for me at least =)
For a quick and easy cole slaw, shred up your cabbage (or buy a bag of pre-shredded cabbage), add half a bottle of poppy seed dressing, mix, then add slivered almonds on top for extra crunch. And that’s it! Easy and yummy!
