Skillet Sicilian Steak

- 1-2 lbs grilling steak (ribeye, NY strip, flat iron, flank, etc)
- Salt and pepper
- 2-3 Tablespoons olive oil, (reserve 2T for herb paste)
- ½ teaspoon oregano
- ½ teaspoon basil
- ½ teaspoon thyme
- ¼ cup sliced green olives
- ½ of 14.5 oz can of diced tomatoes
- Preheat a cast iron skillet or large pan on medium-high.
- Season steaks with salt and pepper.
- Add about 1 tablespoon oil to the pan and add the steaks.
- Cook for about 3-5 minutes on each side (or 145 degrees F, medium-rare).
- CAUTION: This seriously smoked up my house. So you might consider doing this on the grill outside. You can just put the pan on the grill.
- Combine seasonings and oil into a small bowl and pour over steaks.
- Add tomatoes and olives into pan around steaks and heat through a few minutes.
- Serve sliced in 1 inch strips topped with tomato and olive mixture.
