Heat a large skillet on medium and slowly cook scrambled eggs. (I have found they are moister and taste much better on a lower setting. They take a little longer, but well worth it.)
Heat tortillas in a wet towel on 15-20 second increments until soft enough to fold without breaking.
Layer with 1-2 tablespoons shredded cheese, top with warm eggs (melts cheese), then about 2T salsa per burrito.
Fold in sides and roll up. I then wrap them in plastic wrap and put into freezer bags to heat up later.
Reheating: To reheat, don’t thaw(they will get soggy). Heat in microwave on high for about 1 minute. Serve with sour cream and more salsa.
