Baked Oatmeal

Ingredients
The night before…
3 cups rolled oats -not quick cook
¾ cup sugar (I used turbinado or sucanat)
1 teaspoon cinnamon
¾ stick melted butter
1½ cups plain yogurt or kefir
In the morning...
1 cup milk (sweetened almond or coconut would be great here!)
2 eggs, beaten
2 teaspoons baking powder
1 teaspoon salt
Instructions
The night before…
Combine the night before ingredients.
Cover with plastic wrap.
Leave on the counter overnight.
In the morning…
Combine morning ingredients in a separate bowl.
Add into oat mixture.
Pour into greased glass baking dish.
Bake at 350 degrees for about 20 minutes or until it looks a little browned around the edges.
