Eggs with Avocado and Salsa
  • 2-3 eggs, beaten
  • 2 tablespoons milk (optional)
  • Salt and pepper, to taste
  • 1 avocado, diced
  • 2-3 tablespoons salsa or diced tomatoes
  1. Beat eggs, milk, salt, and pepper.
  2. Heat a sauce pan over medium heat. Coat bottom with oil (coconut or canola).
  3. Once warm, cook until eggs are cooked through.
  4. *Cooks Note: They will continue to cook once you take them off the heat, so don’t overcook or they will be really dry.
  5. Put onto your plate and generously top with avocado/guacamole and salsa/tomatoes.
