Apple Pie Pocket
 
Ingredients
  • 2 Pie crusts (I just use refrigerated pie crust, be sure to let it sit out before you unroll it so it doesn’t break.)
  • 6 cups apples (peeled, cored, and thinly sliced-- I recommend Granny Smith)
  • 1 Tablespoon lemon juice (Sprinkle over apples after cut, to keep them from browning)
  • ¾ cup sugar
  • 2 Tablespoons flour
  • ¾ teaspoon cinnamon
  • ¼ teaspoon salt
Instructions
  1. Heat oven to 375 degrees.
  2. Set out pastry circles to thaw.
  3. In a large bowl, mix all ingredients.
  4. Spoon half of apple mixture into center of each well-thawed pastry circle.
  5. Pull pastry up and around apples, shaping it like a pocket (as in photo).
  6. Bake 30-45 minutes or until apples are tender and crust is golden brown. (Watch your oven; temperatures may vary.)
  7. Cool on cooling rack at least 2 hours before serving.
