Looking forward to trying your Crockpot Chipotle-Lime Chicken Thighs with Jamaican Rice and Beans this week. Have you ever made that ahead, or frozen it (without the avocado, of course)? Do you think that would work? I am all about freezing meals for my busy week!
Kelly – I got a 20 lb bag of red potatoes on sale last week for $3.99. I would like to try to freeze some of them since that is way more than the two of us can eat before they go bad.
I wanted to try your steak fries but I don’t have the freezer space to “flash freeze” on a tray before I baggie them up. Any thoughts?
Maybe lay them out between wax paper and freeze flat. That way the paper would separate family servings. Let me know how that works!
Kroger has fresh asparagus fir $1,88 per lb this week – I love fresh asparagus and would like to buy some extra for later. Any suggestions on blanching/freezing it?
