Skillet Sicilian Steak

  • 1-2 lbs grilling steak (ribeye, NY strip, flat iron, flank, etc)
  • Salt and pepper
  • 2-3 Tablespoons olive oil, (reserve 2T for herb paste)
  • ½ teaspoon oregano
  • ½ teaspoon basil
  • ½ teaspoon thyme
  • ¼ cup sliced green olives
  • ½ of 14.5 oz can of diced tomatoes
  1. Preheat a cast iron skillet or large pan on medium-high.
  2. Season steaks with salt and pepper.
  3. Add about 1 tablespoon oil to the pan and add the steaks.
  4. Cook for about 3-5 minutes on each side (or 145 degrees F, medium-rare).
  5. CAUTION: This seriously smoked up my house. So you might consider doing this on the grill outside. You can just put the pan on the grill.
  6. Combine seasonings and oil into a small bowl and pour over steaks.
  7. Add tomatoes and olives into pan around steaks and heat through a few minutes.
  8. Serve sliced in 1 inch strips topped with tomato and olive mixture.
