Kelly's Homemade Granola

  • 6 cups old-fashioned oats
  • 1 cup wheat germ
  • ¼ cup ground flaxseed
  • 1½ cups total nuts or ½ cup each of sliced almonds, pecan and walnut bits
  • 1 cup sunflower seeds (or pumpkin seeds)
  • 1 cup coconut
  • 4 teaspoons cinnamon
  • 1 teaspoon salt (omit if sunflower seeds are salted)
  • 1 cup dried fruit (craisins, raisins, apricots) – optional
  • 1 cup honey (heated in microwave), brown sugar, or white sugar (add sugars to dry ingredients)
  • ½ cup canola oil or butter, melted
  • ¼ cup maple syrup
  • 1 tablespoon vanilla
  • 1 cup dried fruit (craisins, raisins, apricots) – optional
  1. Preheat oven to 350 degrees.
  2. Combine dry ingredients in a large bowl. Mix wet ingredients in another small bowl, and heat in the microwave to mix through. Stir both together until well mixed.
  3. Grease two 9×13 baking dishes and place granola mixture in them evenly.
  4. Bake for 20 minutes, then remove and add dried fruit (if you are using). If not, still remove and stir, bake another 20 minutes, stirring at 10 minutes in. Keep a close eye on it the second round, it burns easily! It should be evenly brown. Cool and store in an airtight container.
