Picnic Pasta
 
Ingredients
For the Eggplant Layer
  • ½ eggplant, cut into 1-inch cubes
  • Sea salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • 1 cup grape tomatoes, halved
  • ¼ cup roasted red peppers, large diced
For the Bean Layer
  • 2 tablespoons olive oil
  • ½ onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon minced fresh ginger (or ½ tablespoon ground ginger)
  • ½ teaspoon cumin
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper (or red pepper)
  • Zest of 1 lemon (or ¼ lemon, juiced)
  • 1 can chickpeas, rinsed and drained (or cannelloni beans)
  • ¼ cup white wine or chicken broth
  • Sea salt and freshly ground black pepper
For the Pasta Layer
  • 2½ cups cooked whole wheat pasta (I used penne)
  • 3 tablespoons chopped, pitted green olives
  • 3 tablespoons chopped fresh cilantro leaves (optional)
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • Sea salt and freshly ground black pepper
  • 2 cups shredded cooked chicken (leftover rotisserie chicken or breasts shredded)
Instructions
For the Eggplant Layer
  1. Place the eggplant cubes in a colander and salt liberally. Let rest for 20 to 30 minutes and then blot with paper towels.
  2. In a large saute pan, heat the olive oil over medium-high heat and cook the onions until tender. Add the eggplant. The eggplant will absorb the oil, add more if the eggplant is dry or not crisping up.
  3. Cook for 5 minutes on medium heat.
  4. Add the garlic, and lower the heat, adding a little more oil, if necessary.
  5. Season with salt, and pepper, to taste and cook until the eggplant is tender, about 3 or 4 more minutes.
  6. Add the tomatoes and red peppers and cook long enough to warm and force the juices to release.
  7. Turn off the heat. Season with salt, and pepper, and set aside.
For the Bean Layer
  1. In a large saute pan, heat the olive oil, then add the onions and cook over medium heat until tender and beginning to brown, about 10 minutes.
  2. Add the garlic, ginger, cumin, cinnamon, cayenne, and lemon zest (or juice) and cook until fragrant, about 1 minute.
  3. Add the chickpeas and stir to coat.
  4. Turn the heat up to high and deglaze the pan with the wine or chicken broth.
  5. Remove the pan from the heat, season with salt, and pepper, to taste and set aside.
For the Pasta Layer
  1. Place the pasta in a large serving bowl.
  2. In a small bowl, whisk together the olives, cilantro, oil, vinegar, and salt, and pepper to make a light vinaigrette.
  3. Drizzle the dressing over the pasta and toss to coat completely.
  4. Take all ingredients and pour on top of pasta mixture into large serving bowl. Toss gently to coat.
