Vegetable Beef Soup
- 1 onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup diced potatoes
- 1 cup corn
- 1 cup peas
- 2 cans diced tomatoes with juice
- 1 large can tomato sauce
- 3-4 beef bullion cubes
- 1pound ground beef, cooked (or other leftover beef like pot roast or steak, diced or shredded)
- 2 cups water
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
- Heat onions, celery and carrots in a large stockpot with some olive oil.
- Add potatoes and cook for about 3 minutes.
- Add in your meat.
- If soup seems too thick, add more water.
- Bring to a boil, then reduce and simmer for 30-45 minutes.
- Serve with corn bread, elbow macaroni or just plain!
