Baked Oatmeal

Ingredients
The night before…
  • 3 cups rolled oats -not quick cook
  • ¾ cup sugar (I used turbinado or sucanat)
  • 1 teaspoon cinnamon
  • ¾ stick melted butter
  • 1½ cups plain yogurt or kefir
In the morning...
  • 1 cup milk (sweetened almond or coconut would be great here!)
  • 2 eggs, beaten
  • 2 teaspoons baking powder
  • 1 teaspoon salt
Instructions
The night before…
  1. Combine the night before ingredients.
  2. Cover with plastic wrap.
  3. Leave on the counter overnight.
In the morning…
  1. Combine morning ingredients in a separate bowl.
  2. Add into oat mixture.
  3. Pour into greased glass baking dish.
  4. Bake at 350 degrees for about 20 minutes or until it looks a little browned around the edges.
