Chicken Tortilla Soup
- 1 onion, diced
- 1 tablespoon olive oil
- 2 tablespoons diced jalapenos
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 6 cups chicken broth or stock
- 1 tablespoon fresh cilantro, chopped
- 2 cups shredded or diced leftover chicken
- 1 can diced tomatoes or Rotel with juices
- 1 cup frozen corn
- 1 can black beans, rinsed and drained
- Sour cream, avocados, and hot sauce – optional as garnish
- Tortilla chips, to eat with
- In a large stock pot or Dutch oven, saute onions in olive oil for 3 minutes.
- Add jalapenos, cumin, and chili powder, and cook for 2 more minutes.
- Add remaining ingredients and bring to a boil.
- Then reduce to low heat and simmer for 20 minutes.
- Serve with tortilla chips or quesadillas. Garnish with sour cream, avocados, and your favorite hot sauce, like Frank's RedHot orTexas Pete!
