Tomato Covered Minute Steak
  • 1 pound of minute or cube steak
  • 2 tablespoons flour
  • Salt and pepper
  • ½ onion, sliced
  • 1 cup sliced mushrooms
  • 1- 14.5 ounce can diced tomatoes
  1. Cut onion in half and slice into half circle shapes.
  2. Sprinkle steaks with salt and pepper, then dredge in flour.
  3. On high, heat large pan with oil and place steaks in a searing hot pan. Add onions and mushrooms to the pan and cook 4-5 minutes per side.
  4. Remove steaks and toppings from pan and place into a 10×13 baking dish.
  5. Pour a can of tomatoes over the top.
  6. Place into a 350 degree oven for 20 minutes.
  7. Serve over angel hair or egg noodles with a salad or steamed broccoli.
