Quinoa Salad with Dried Fruit and Nuts

Ingredients
  • 1 cup quinoa
  • ¼ teaspoon salt
  • 2½ cups chicken stock (substitute: water)
  • 3 green onions, chopped
  • ½ cup craisins and/or dried apricots
  • 1 pinch cayenne pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon rice wine vinegar (substitute: apple cider vinegar)
  • 2 tablespoons lemon juice
  • 2 tablespoons sesame oil (optional)
  • ⅓ cup chopped fresh cilantro
  • ¾ cup chopped pecans or walnuts (toasted)
Instructions
  1. Bring the quinoa, salt, and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, 20 to 25 minutes.
  2. Once done, transfer into a large serving bowl, and let it cool for 20 minutes.
  3. Once cool, stir in the green onions, craisins, apricots, cayenne pepper, vegetable oil, vinegar, lemon juice, and sesame oil.
  4. Let sit at room temperature for 1 hour to allow the flavors to blend.
  5. Just before serving, stir in the cilantro and pecans.
