Grilled Quesadillas

  • 4-6 whole wheat tortillas
  • 1 zucchini, sliced into spears
  • 1 onion, thinly sliced
  • 1 cup sliced mushrooms
  • salt and pepper
  • seasoning salt (optional)
  • 1-2 tablespoons olive oil
  • 1-2 cups shredded cheese (cheddar or Monterey Jack)
  1. Toss zucchini, onion and mushrooms with oil, and sprinkle with salt and pepper (or seasoning salt). Set aside in bowl.
  2. Fire up the grill. Using a vegetable grill basket, spray grill basket with oil and place on grill to heat up for about 3 minutes. Once grill basket is hot, pour in the vegetables.
  3. Cook in basket, turning frequently for 7-10 minutes or until soft and cooked through.
  4. Remove from grill pan and put back into original bowl.
  5. Spray one side of tortilla with oil and place directly on grill (or electric griddle) and top generously with cheese, then place about 1 cup of grilled vegetables evenly over.
  6. Top with another tortilla. After cheese starts to melt, turn over quesadilla for a few more minutes.
  7. Remove from grill, slice into 6 triangles and serve.
