Apple Pie Pocket
- 2 Pie crusts (I just use refrigerated pie crust, be sure to let it sit out before you unroll it so it doesn’t break.)
- 6 cups apples (peeled, cored, and thinly sliced-- I recommend Granny Smith)
- 1 Tablespoon lemon juice (Sprinkle over apples after cut, to keep them from browning)
- ¾ cup sugar
- 2 Tablespoons flour
- ¾ teaspoon cinnamon
- ¼ teaspoon salt
- Heat oven to 375 degrees.
- Set out pastry circles to thaw.
- In a large bowl, mix all ingredients.
- Spoon half of apple mixture into center of each well-thawed pastry circle.
- Pull pastry up and around apples, shaping it like a pocket (as in photo).
- Bake 30-45 minutes or until apples are tender and crust is golden brown. (Watch your oven; temperatures may vary.)
- Cool on cooling rack at least 2 hours before serving.
