Lemon Parmesan Vinaigrette
  • ½ cup olive oil
  • ¼ cup lemon juice (or 2 lemons, juiced)
  • 2 garlic cloves
  • 1 tablespoon honey
  • ¼ cup grated Parmesan cheese
  • dash of pepper
  1. In a small to medium sized mason jar, combine all ingredients except garlic cloves.
  2. Using the flat side of a knife, smash cloves until flat. Add to mixture.
  3. Secure lid and shake well.
  4. Refrigerate for up to 24 hours before serving to let garlic seep into dressing.
