Thai Red Curry with Grilled Vegetables over Rice
  • ¼ head of red cabbage, sliced
  • 1 onion, sliced
  • 1 head broccoli, chopped
  • 1 red pepper, cut into strips
  • 1 zucchini, chopped
  • 4-5 leaves of Kale, chard, or bok choy
  1. Toss ingredients in olive oil, add salt and pepper to taste, and grill. (I use this grilling pan—makes it so much easier!)
  2. Assemble grilled vegetables over hot rice.
  3. Top with curry sauce. (I serve the curry sauce at room temperature.)
