Eggs over Greens
  • 4-5 cups of kale (or Swiss chard, spinach, your favorite green) cleaned and rinsed, with ends removed, chopped
  • 1 tablespoon of oil (Try coconut, grapeseed, or bacon grease)
  • 1 small to medium onion, diced
  • 2 cloves of garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon basil
  • Salt and pepper to taste
  1. In skillet, saute onions and garlic with oil until translucent.
  2. Then add greens.
  3. Once greens wilt down, add seasonings.
  4. Remove from heat.
  5. Arrange bed of greens on plate.
  6. Fry your eggs in the same skillet—use more oil oil as needed.
  7. After cracking open your eggs, sprinkle red pepper flakes, basil, salt, and pepper on eggs while they are face up.
  8. Cook eggs according to your preference.
  9. When done, lay over the greens.
