The only meals I have to do very much work on this week is the homemade pizza and pot roast. I would love to know what meal ideas you have for leftover pot roast. I have exhausted my brain the last few rounds with roast, and would love your input!

Meal Plan for the week of May 17th:
Sunday:
(Lunch) BBQ Chicken Nachos w/ black beans
(Dinner) Community Group Dinner
Monday: Grilled Tilapia, salad, herb crusted potatoes, french bread
Tuesday: Spaghetti (freezer), homemade bread (Couponing Workshop tonight)
Wednesday: Pot Roast, mashed potatoes, butternut squash, homemade bread
Thursday: Greek Chicken Pitas (Frozen Purdue Shortcuts, feta, red onion, peppers, lettuce), homemade hummus
Friday: Homemade Pizza (homemade sauce and breadmaker pizza dough)
Saturday: French Dip Sandwiches, salad

Lunches:
Turkey Sandwiches,chips, apples
Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
Leftovers -pot roast, beef quesadillas

Breakfast:
freezer waffles
strawberry smoothie, whole wheat toast w/ peanut butter
cereal, whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

Snacks:
homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter
applesauce
go-gurts
cheese slices on crackers

I usually turn pot roast into a thick beef stew with lots of veggies. Very yummy with corn bread.
What is your recipe for the French Dip sandwiches? Would you share? My husband loves them & I’m planning a roast this week also, so I’d love to try the French Dip as another meal. Thanks!
