I am a little slow in pulling together my menu plan this week, had a busy weekend and am recovering from a sinus infection. Feeling much better today! Do you remember that post I did last week on a “Pantry Challenge“? Well, I started doing one last week and depending on my time this week, we may extend it another week! After the Kroger triples event it kinda wore me out, so I decided I was going to take a little break from the grocery. I need to go get some staples like milk, eggs, bread and lettuce, but will plan according to my freezer, pantry and fridge for this week.
I still have a lot of chicken left from last week’s meal plan for making Roasted Sticky Chicken, so I will incorporate that into quesadillas and more! Also, a lot of repeats from last week, I ditched the meal plan last week because I was sick and they did lots of leftovers and easy meals.

Meal Plan for the week of November 15 th:
Sunday:
(Lunch) Out to lunch with family
(Dinner) Leftovers
Monday: Creamy Chicken Poppyseed, steamed broccoli, whole wheat rolls (we didn’t get this last week!)
Tuesday: Chick-fil-A for family (I am out to a baby shower for my friend Brea!!)
Wednesday: Black Bean Pizza (recipe to come, if it turns out!), green salad
Thursday: Southwestern Chili, cornbread muffins (or this one either!)
Friday: Ribeyes (yes again, we have lots of them from mgrs specials!), baked potato, garlic bread, salad or steamed broccoli
Saturday: Homemade Pizza (make your own – having friends over with kiddos)

Lunches:
Tuna Sandwiches
Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
Leftovers – chicken quesadillas, bbq chicken sand, lean pockets

Breakfast:
freezer waffles w/ frozen strawberries
strawberry smoothie, whole wheat toast w/ peanut butter
cereal, whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter
go-gurts
string cheese

I’m doing a pantry challenge this week. We are exhausted because of a super busy week last week and we were out of town over the weekend. The last thing we want to do is go grocery shopping this week. Thanks to the stockpiling we’ve been doing since August, we can easily do a pantry challenge this week. Yes, we’ve only been doing this for a few weeks and I can’t believe the savings we’ve had AND the amount of food we have…it’s more than we’ve ever had on had. Thanks Kelly for sharing and helping us!
