I don’t can, but I know how to put away 40-lbs of tomatoes in the freezer. Any canning tips for the readers?
Canning tomatoes is really easy! Here is a link with the USDA instructions: http://www.ehow.com/facts_6950501_usda-guide-canning-tomatoes.html If you eat a lot of salsa, look for Mrs. Wages or Ball salsa mix. You dice your tomatoes, cook them with the spices in the package and some vinegar, put them in the jar and then in a canner. If you don’t have a canner, use smaller jars, put a rack or some crumpled aluminum foil in the bottom of a large pot. Just be sure the water can cover the jars by about an inch. Keep the water boiling for as long as the package directions says. It shouldn’t be a hard boil, just boiling. We love our home made salsa! There are also packages for lots of other things – ketchup, chili sauce, etc. – if you have plenty of tomatoes!
