What You Can & Can’t Freeze
Once I started this whole method of “stocking-ahead” I was floored at how many things I could freeze. Really because I just never thought to freeze these things. The whole point of stocking ahead is to get everyday items at 50% off and then use them later. That is difficult to do if you don’t know how to properly freeze things like produce and meat.
So, I thought I would put a list together of items I get the most questions about freezing.
Foods That Don’t Freeze Well:
- cream cheese
- sour cream
- cottage cheese
- heavy cream (not to whip)
- pies with cream or custard fillings
- mayonnaise
- lettuce
- cabbage
- celery
- endive
Foods That Do Freeze Well:
- Kale (blanch it first)
- Pesto
- Yogurt (best if eaten frozen)
- Fresh Herbs (chopped in ice cube trays with water)
- Butter
- Beaten Eggs (for quiches, scrambled eggs)
- Shredded Cheese
- Dough i.e.) Pillsbury Biscuits, Pizza dough (just fully defrost before you work with it)
- Grapes (eat them frozen)
Foods You Should Freeze:
- Nuts (can turn rancid due to the nut oils)
- Parmesan (grated kind, I can keep it longer)

i see sour cream on the list of things that does not freeze well – are you talking about putting the whole container in the freezer or sour cream in casseroles? do those freeze ok when sour cream is an ingredient in the casserole?
