While at my mother-in-laws last weekend, she pulled some homemade salsa out of the freezer and it was THE BEST salsa I had ever had! So, since I had about 7 good tomatoes, plus most of the ingredients for salsa, I decided to try this. It made about 4-16 oz containers for the freezer. I will be doing this for each set of tomatoes I have coming in this summer. The only out of pocket expense for me was the tomatillos, and that was about $2.
- 7-8 tomatillos
- 7-8 homegrown tomatoes
- 1 yellow onion, diced (sweet)
- 2 ribs celery, thinly sliced
- 4 jalapeno peppers, finely diced (or 5 tablespoons pickled)
- 7 garlic cloves, minced
- ¼ cup cilantro, minced
- 1 tablespoon cumin
- 1 tablespoon honey
- 2 teaspoons salt
- 4 tablespoons red wine vinegar
- 4 tablespoons lime juice, fresh squeezed
- Boil a large pot of hot water. Drop tomatoes in gently, boil for one minute. Transfer to a bowl of cold water w/ ice in it. This stops the cooking process and will allow you to easily peel the tomatoes.
- Drop tomatillos into same water, set timer for 10 minutes. Peel tomatoes while tomatillos boil. After 10 minutes, transfer tomatillos to cold ice water bath. Peel and crush tomatillos.
- Add all ingredients into a large bowl and season to taste. Let sit overnight or put into containers to freeze.

I hate to say this…but my husband and I are salsa ‘snobs’!! We only like a certain kind…but this is so DELICIOUS! Thanks to your mother-in-law and to you for sharing. We will only be eating this salsa recipe from now on and sharing with our family (other salsa ‘snobs’).

If you can grow tomatoes, you can grow tomatillos! You should try growing them next season, they are very rewarding and grow just as easily as tomatoes! Then you can be in Salsa heaven. Thanks for sharing this recipe, I plan to try it this week now that my tomatillos are ripe!
I think I will try it, although I don’t cook well, I love it.
