Tilapia Recipes

tilapia-illetSince Tilapia has been on sale at Harris Teeter and Food Lion in the last few weeks, I have had a lot of questions on how I cook it. I am very particular about the way I eat/cook my fish. Like everyone else, I can’t stand “fishy” fish.

Below are a few of my favorite recipes:

:: Pecan Crusted Tilapia

:: Grilled Tilapia Sandwich

    1. Basically all we do is take the fish, sit it in a piece of aluminum foil, drizzle with olive oil and your favorite seasoning. A few that are good: cajun, greek, lemon pepper, or combo of things (that’s what we do!).
    2. Grill in foil (it can fall apart), for about 5 minutes, don’t overcook. When fish is done it will be a little flaky. If the inside looks opaque, it needs to cook a little more.
    3. Grill whole wheat hoagie while cooking fish, spread mayo and sprinkle w/ a little cajun seasoning. Also good if you have fresh lemon, sprinkle over fish on sandwich.
    4. Serve: We serve home fries and a veggie with this, YUM!

Please leave a post here on your favorite fish recipes. I find that is the most difficult protein for most people to incorporate, we could all use a little help with it!

    We also love tilapia. I usually just season mine with lemon pepper and cajun seasoning, and then broil in the oven on high about 8 minutes. I will serve over a bed of rice pilaf and top with some shredded cheddar cheese, diced tomatoes, and parsley. I also will serve a side of brocolli or asparagas. We love it this way! Yum-o!

    Thanks for thge grilling idea for the tilapia. We love it with lots of lemon pepper and lots of minced garlic with a pat of butter. I usually bake this and had not thought of grilling in foil packets. What a great idea! and no pan to wash!

    We were planning on doing Talapia this week too. Here’s our favorite way to do it – – though we’ll try other ways next time!
    Saute 1 pkg (6.9 oz) of chiken flavored rice mix (just the dry mix) in 1 T. of butter in a frying pan til it’s browned up a bit.
    Add 2 3/4 c. water, 1 pkg of frozen chopped spinach (thawed already) and seasoning packet from the rice.
    Bring to boil, reduce heat and simmer for 10 minutes. Top with fish fillets (at this point I sprinkle generously with lemon pepper, though the original recips calls for sprinkle with 1/4 c. toastd slivered almonds) simmer til fish flakes easily.

    We had tilapia on Tuesday…
    Dredge the fish in a beaten egg and then dredge in seasoned Panko. Bake at 325 for about 15 minutes. Serve on a toasted Hoagie or w/ your fave rice and veggies! Enjoy

    I actually have NEVER tried the lemon pepper…must do that!

    Here’s how I prepare it….and even my kids love it!

    * 1/2 cup Parmesan cheese
    * 1/4 cup butter, softened
    * 3 tablespoons mayonnaise
    * 2 tablespoons fresh lemon juice
    * 1/4 teaspoon dried basil
    * 1/4 teaspoon ground black pepper
    * 1/8 teaspoon onion powder
    * 1/8 teaspoon celery salt
    * 2 pounds tilapia fillets

    Directions:

    1. Preheat your oven’s broiler. Grease a broiling pan or line pan with aluminum foil.
    2. In a small bowl, mix together the Parmesan cheese, butter, mayonnaise and lemon juice. Season with dried basil, pepper, onion powder and celery salt. Mix well and set aside.
    3. Arrange fillets in a single layer on the prepared pan. Broil a few inches from the heat for 2 to 3 minutes. Flip the fillets over and broil for a couple more minutes. Remove the fillets from the oven and cover them with the Parmesan cheese mixture on the top side. Broil for 2 more minutes or until the topping is browned and fish flakes easily with a fork. Be careful not to over cook the fish.

    Here’s my bestest fish recipe and so easy. Line a cookie sheet with foil with enough left over the pan to attach a top sheet making a “tent.” Line the bottom of the pan with fresh washed spinach. On top of spinach lay white fish fillets.
    I prefer orange roughy. Slice one onion and one or two tomatoes and lay on top of fillet in alternating slices, so that the fillet has onion and tomatoe slices on top it. Now sprinkle with spices of your choice and drizzle with olive oil. Put foil on top, roll up edges making the steam tent and put in oven 400 degrees for 30 minutes. Make some corn on the cob and you’ve got a company dinner and it’s easy and extreemly delicious!
