In the mean time, here is an update from Christina’s 2009 Goals and her weekly meal plan. I thought you guys would enjoy seeing two different sets of meal plans to help you out.

Here is how I’m doing on my January goals so far and my meal plan for this week:
Week One Grocery Spending: I’m trying to spend $50 a week this month. I spent $17 on New Year’s Eve food, so I had $33 left to spend at the grocery. I spent $36 at Publix- my big splurge was Downy and an extra paper (5 coupon inserts). I spent $2 at Walgreens and $2 at CVS (I used expiring Extra Care Bucks to buy diapers). I also had to buy ground beef at Costco ($15) this week, but it will last 2 months. So I spent $71 this week, which leaves me $129 for the rest of the month, or about $40 a week. Oh, this is going to be an interesting and fun challenge!
Menu Plan for Week One: (Note: I do not love to cook as much as Kelly does, so my meals are more simple. I am also similar to Kelly’s plan with breakfasts and lunches, we pretty much have cereal and Eggos, sandwiches and leftovers around here)
- Sunday night: Tortilla soup from the freezer, chips, veggies and cheese dip
- Monday night: Leftovers (my husband had a dinner meeting)
- Tuesday night: Meatball sandwiches, chips and fruit
- Wednesday night: Pork Loin in crockpot with Red Sauce (recipe below), couscous and green beans
- Thursday night: Frozen pizza (Trader Joes) and salad
- Friday night: Tacos
- Saturday night: Dinner out
This week I have made catalina dressing from scratch and used up some dessert mixes from the pantry. And since I am trying not to shop for anything extra, I made a list of all the non-food things I wanted to buy that would have to wait until February. Somehow that made me feel better!
Red Sauce recipe: I swear this combination sounds weird, but it is delicious: 1 can whole berry cranberry sauce, 1 packet of onion soup mix, and a 7oz bottle of catalina dressing. Mix it together and cook it over pork or chicken in the crockpot or oven. I use 1/2 the sauce for 2-3 chicken breasts or 1 lb pork loin, and freeze the other 1/2 of the sauce to use for another dinner.
