Menu Plan Monday: May 25th

Welcome!  For those of you who are new to Meal Planning,  be sure to check out my “Meal Planning” tab here for easy tips  on getting started – there are lots of great resources here.

I didn’t tell you what I spent all the money on at Kroger this week (my trip here).  So, I’ll give you a brief synposis, so that in my meal planning you can see where I am getting the ingredients from!

We got about 5 lbs Ground Turkey, 7 lbs Ground Chuck, 5 containers of strawberries, 5 lbs marked down bananas, 2 bags organic chips (managers specials!), deli-sliced turkey & ham (great sale), diapers (separate budget) and a bunch of other random things!

I prepped the strawberries and bananas, froze the turkey and then made 20+ hamburger patties for the freezer so our weekly cookouts would be easier.

Meal Plan for the week of May 25th:

Sunday:
(Lunch)   Greek Chicken Pitas (Frozen Purdue Shortcuts, feta, red onion, peppers, lettuce) w/ homemade hummus and greek vinagrette
(Dinner)  Hamburgers, pasta salad, and baked beans

Monday Memorial Day:   Grilled Chicken & Veggie Kabobs, rice (free packets), bread

Tuesday:    Spaghetti (freezer),  salad,  homemade bread (didn’t eat last week)

Wednesday: Ham & Cheese Quiche, salad, fruit

Thursday:    BLT‘s , chips, fruit

Friday: Date Night!!

Saturday:   Homemade Pizza (homemade sauce and homemade dough)

Lunches:

Ham or Turkey Sandwiches,chips, apples
Grilled Cheese Sandwiches, sliced apples
PB&J,  sliced apples
Leftovers -greek chicken pita/salads, chicken kabob and rice

~~~~~~~~~~

Breakfast:

freezer waffles
strawberry smoothie, whole wheat toast w/ peanut butter
cereal,  whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

Snacks:

homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter
applesauce
go-gurts
cheese slices on crackers

    Do you have the recipe for the Ham and CHeese Quiche in this week’s meal plan???

      No, but I will put it up for you the day I make it. But in the meantime, go here for a great hashbrown quiche recipe, you can do this, but use a regular pie crust and it will be great!!

    This is an easy week, so I thought I would post our plan. Maybe I’ll stick to it since the whole world can see it.
    Monday-Cookout!
    Tuesday-Husband-cookout leftovers. Baby-White Bean and Veggie Toddler Pasta from freezer. I’m going to a baby shower.
    Wednesday-I’m going to try an adapted version of this recipe for Barbque Chicken Calzones to use a Pillsbury pizza crust that is soon going to expire and some of the barbque sauce that I’ve stocked up on so “free”ly lately. http://www.recipezaar.com/Barbecue-Chicken-Basil-Calzones-Oamc-116402
    Thursday-Bertoli or Birdseye Skillet Meal and salad
    Friday-In-laws arrive. Eat Out!
    Saturday-Grill-out Chicken/Steak, Pasta or Potato Salad, and Veggie Hobo Bags

    Thanks for all you do, Kelly. I took your class several months ago and have really enjoyed getting into this. I’m averaging about 60% savings at Publix and am just amazed at what we are getting for our money.
