Menu Plan Monday: February 22 -Still Trying To Catch Up!

To be completely honest, I have done terrible this week at planning and grocery shopping.  We way overspent this week because I could never get it together enough to get a list and head to the store.  Being out of town for Blissdom and then sick with the flu has thrown me for a loop, and I can’t seem to get caught up.  I changed all that today by heading to the store with a planned grocery list and pulling together a meal plan we will actually use!

How about you? What do you do on those weeks that you just can’t seem to get a plan together or even get to the store? As I told you last week, that is why I am so happy for my freezer stockpile. The weeks that I am unprepared, the freezer has my back!

The weather was 64 degrees here yesterday, so that is why you are seeing the grill meals.  We love grilling, so if it is nice, we are getting started early.

Meal Plan for the week of  February 22nd:

Monday:  Grilled Tilapia Sandwich, w/ sweet potato fries, green salad

Tuesday:   Hamburgers, sweet potato fries

Wednesday:  Spaghetti, salad, garlic bread

Thursday:  Cheese Quiche, green salad and rolls

Friday: Grilled Pork Tenderloin, savory sweet potatoes, salad

Saturday:  Black Bean Pizza

Sunday:

(Lunch)  Corky’s (using Groupon coupon!)
(Dinner)  Taco Salad

~~~~~~~~~~

Lunches:

Turkey Sandwiches
Grilled Cheese Sandwiches, sliced apples
PB&J,  sliced apples
Morning Star burgers
Leftovers – frozen lasagna

~~~~~~~~~~

Breakfast:

freezer waffles w/ strawberries
strawberry smoothie, whole wheat toast w/ peanut butter
cereal,  whole wheat toast w/ jelly
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

Snacks:

homemade popcorn or mini-pouches
smoothies
apples w/ peanut butter
applesauce
go-gurts
string cheese
cheese slices on crackers

    I'm kind of doing my own pantry challenge this week. I came across half a bag of potatoes and two tubs of fat free sour cream that needed to be used. That's when I searched for sour cream potato soup recipes. Varying from the recipe a little, based on what I had in stock, I cooked up a whole stock pot of potato soup for my family to eat from for a few days, and I even froze a lot of it. I got the chicken broth almost free at Publix last week, spent very little on the sour cream a few weeks ago, and celery and onions are always rather inexpensive, so this meal was probably one of the cheapest per serving that I've made yet. It feels good to have a nice warm meal and know that money's not flying out of your wallet.
