My Pantry Challenge for January is going pretty well…so far! I might make a very small trip to Super Doubles tomorrow. I am not sure, I want to go get some free items to give as donation, so we’ll see! I am actually pretty surprised at how well I am doing, I thought I might have broken down by now to hit a sale, he he. I am doing lots of crockpot and comfort foods this week, it is so cold here, I love eating these in cold weather. When warm weather comes around I might have wished I had consumed a few less calories though :).

Meal Plan for the week of January 11th:
Sunday:
(Lunch) Leftovers
(Dinner) Crockpot Chili, corn muffins, fritos and spaghetti noodles (Community Group Dinner)
Monday: Roasted Sticky Chicken, mashed potatoes, salad
Tuesday: Spinach and Cream Cheese Lasagna, green salad and bread (using leftover spaghetti sauce from last week)
Wednesday: Crockpot Pinto Beans with salsa, sour cream and corn bread muffins
Thursday: Turkey Freezer Soup, French Bread (Freezer)
Friday: White Chicken Chili, salad, cornbread muffins (leftover chicken and white beans in freezer)
Saturday: BBQ Chicken Pizza, cantaloupe

Lunches:
Turkey or Tuna Sandwiches
Bagel Pizza’s – cantaloupe
Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
Quesadillas – cantaloupe
Leftovers –lasagana and chili

freezer waffles w/ frozen strawberries
strawberry smoothie, whole wheat toast w/ peanut butter
cereal, whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

applesauce muffins (in freezer, pop out 1 hour early)

what is a good price for chicken (not the boneless skinless breasts but the chicken you use in your sticky chicken recipe)? not sure what a good deal is on that if/when i find it.

Susannah – I shoot for around $.59/lb, they were on sale last week at Publix for only $.69/lb which is a GREAT PRICE! I think their quality of meat is great, so best deal I have seen.
