Okay, in all honesty, I broke down and got a few staples we were running out of this week, but I kept it well below our weekly budget. So, in total I am still below one week’s budget to now. I will keep it really slim this week because we have plenty of milk and lots of fruit left. I lucked out on my trip to Kroger and got a raincheck on the Beef Brisket that I wanted. So, now I can get it in February, when my Pantry Challenge is over!
Doing this Pantry Challenge has gotten me motivated to be more creative in the kitchen. I love watching The Food Network, and I recorded a few episodes of $10 Dinners by Melissa d’Arabian. We watched her during The Next Food Network Star reality show. I got a few great ideas below to use up my cherry tomatoes we have in abundance. The only thing I need to make her meals is one zucchini and they are on sale this week at Kroger.
You will see a few repeats from last week. Since I had two workshops and lots going on, we did a lot of leftovers and “go-to” meals to make things easier.

Sunday:
(Lunch) White Chicken Chili, cornbread
(Dinner) Leftover Spinach and Cream Cheese Lasagna, garlic bread
Monday: Chicken Tortilla Soup, salsa and chips, green salad
Tuesday: Tuna and Tomato Bread Salad
Wednesday: Roasted Vegetable Penne with homemade bread
Thursday: BBQ Chicken Pizza, apples
Friday: Northern Beans with Corn Bread
Saturday: Crockpot BBQ Beef Ribs, baked beans, slaw

Tuna Melt Sandwiches
Grilled Cheese Sandwiches, sliced apples
PB&J, sliced apples
Black Bean Burgers
Chicken Patties
Leftovers – Penne, Tuna Bread Salad, White Bean Soup

freezer waffles w/ frozen strawberries
strawberry smoothie, whole wheat toast w/ peanut butter
cereal, whole wheat toast w/ jelly
breakfast burrito (egg, cheese, & salsa)
egg sandwich w/ cheese, fruit
oatmeal, whole wheat toast, sliced apples

Pumpkin Chocolate Chip Muffins (in freezer, pop out 1 hour early or microwave on defrost)
