I just want to say hi to all the new readers this week. I have had a lot of classes in the last two weeks, so check out my “Meal Planning” tab here to help you out while you are getting started, lots of great resources.
Again a few reruns from last week, I have been running around like a chicken with my head cut off.

Meal Plan for the week of March 7th
Sunday:
(Lunch) Pork Quesadillas, green salad w/ apples, walnuts and cranraisins
(Dinner) Dinner with church small group (homemade tamales!)
Monday: Slow Cooker Lasagna (recipe this week), salad, homemade bread
Tuesday: Taco Salad (spring mix, taco shells, black beans, cherry tomatoes, cheese, salsa, sour cream, green onions)
Wednesday: Spinach, Rice and Cheese Casserole, salad, fruit (using brown rice from Apricot pork last week and sale spinach at HT – doubling, to freeze extra)
Thursday: Shrimp & Grits (recipe this week), homemade bread, green salad
Friday: Daddy Daughter Dance – dinner out, leftovers for me 🙂
Saturday: Homemade Pizza (homemade sauce and breadmaker pizza dough)
Lunches:
Turkey/Ham Sandwiches, fruit, chips
Grilled Cheese Sandwiches, sliced apples
PB&J, bananas
Leftovers -lasagna, spinach casserole, tacos (leftover beef mixture)
Breakfast:
breakfast burrito (egg, cheese, & salsa)
blueberry smoothie, whole wheat toast
cereal, sliced apples
homemade waffle sticks (freezer), apples
egg sandwich w/ cheese
oatmeal, whole wheat toast, sliced apples

How did the slow cooker lasagna turn out? Did you have to chisel the crust off the sides or did you use a liner? I really want to try it. P says I’m high on the pot.
check out my post tomorrow. I recommend lots more sauce than the recipe calls for, I definitely would use a liner if you have one, it was a crusty mess! But, I forgot to grease the cooker too. cut back the cooking time in half. Tasted great though!
