My Weekly Meal Plan
We have some collards left from last week that I picked up last minute and I am going to try something new with them. While we were at Whole Foods yesterday I tasted an Asian-style collard greens salad behind the cold bar. Man was it wonderful and I never would have tried cold collards! I might post that next week as a recipe if I can get it together and if mine turns out right!
I am hoping to make a trip this week to a local strawberry farm so I can make some of my grandmother’s freezer jam, so if you have any other strawberry recipes, let me know!
Sunday: Grilled Chicken, Asian Collard Greens Salad (my version from Whole Foods ), cajun sweet potatoes
Monday: Mini Meatloaf Recipe, Kale Salad with Red Peppers, avocados and mangoes, homemade bread
*freezer meatloaf from last weeks dinner
Tuesday: Strawberry Spinach Salad with Sweet Balsamic Dressing and Grilled Chicken
*Using leftover grilled chicken from Sunday, and strawberries from our pick that morning!
Wednesday: Grilled Vegetables (kale, red cabbage, red peppers, zucchini and onions) with noodles and Ponzu sauce
Thursday: BLT Salad with Homemade Buttermilk Dressing
*using greens from our garden and bacon cooked for Sunday breakfast.
Friday: Pizza Night! Homemade Pizza Dough with Homemade Pizza Sauce
*Top with whatever is left in fridge, my new favorite is fresh chopped spinach, sliced tomatoes, green olives, peperocinis and artichokes.
Saturday: Dinner Out at a Wedding
