Well, this is take two for this post -I lost the original detailed one set to post this morning, oh well. So since it is our 6-year anniversary tomorrow, I am trying to get work done to spend quality time with my sweet husband! I am only giving you a portion of what I originally posted. I don’t have the energy or the time to redo all the details, but you can see in the pics the majority of what I got on our trips.
As I will say in my Menu Plan post on Monday, I am working on healthier diets for my family. For us that mostly means more fiber-rich foods, I was amazed at the lack of fiber in our diets when I started tracking it! That just means more legumes, and fruits and veggies, plus whole grain un-enriched types of products. This will be a fun challenge to keep it into my $40/week budget. I am also looking to the idea of getting a small grain mill and doing my own flour and grains, MUCH higher nutritional values!
Do you have any great tips or ideas on how I can add more fiber (true, not chemically included) into our diets? Any great recipes? I would love to hear your thoughts, those are usually the best ideas I get!

Glad to hear you are working on healthy diets, as I am very interested in that and you are already an inspiration to me. After all, it’s another way to save money, right? Healthier you = less medical expenses + more energy to enjoy the simpler things in life like hiking, a bike ride, a walk in the park, etc. Looking forward to seeing it in your menu planning and thanks so much for all your wonderful advice!
Re: High fiber options.
I make two soups that are really high in fiber,easy, inexpensive and SO GOOD.
EASY BLACK BEAN SOUP
1 can black bean soup, drained and rinsed
1 c. salsa
1-2 c stock (chicken, beef or vegetable) Amount depends on how thick/thin you like your soup
cumin/salt/pepper to taste
Dump all ingredients into blender (Or place into deep bowl and use an immersion blender) and blend til smooth. This soup is great at room temp or warmed. I like to take reduced fat sour cream and add lime juice and chopped cilantro and put a dollop on my soup before serving.
AVACADO/WHITE BEAN SOUP with SHRIMP SALSA
1 can white beans, drained and rinsed
2 avacadoes, sliced
2+ cups stock (depending on how thick you want your soup)
salt and pepper to taste
1/2 tsp cumin
2 cups cooked, chopped shrimp (salad shrimp is inexpensive and works well)
1/4 c cilantro, chopped
1/4 c sweet onions, chopped
1 lrg tomato, chopped
1 T lime juice
fresh ground salt/pepper to taste
Drain beans. Combine beans, avacado and stock in blender and mix til smooth (or use an immersion blender). Spoon into bowls. Combine all remaining ingredients and place a heaping spoonful into each bowl.

Just started my coupon binder and went shopping last night at Bi-Lo and Food Lion, here in Rock Hill,SC we do not have a Kroger or Publix, we do have Harris Teeter and Aldi. I did really well at Bi-Lo spent 25.62 and saved 23.0o, went to Food Lion and spent 39.41 and saved 18.00, I was impressed with my savings and my goal is not to spend more than 50.00 a week at the grocery store that would cut my grocery bill in half. I pack lunches for my kids and myself 5 days a week to take to work. I also like my fresh vegetables than frozen so I open to suggestions that some one may ave
