Tonight’s Dinner is…Chipotle-Lime Chicken Thighs and Jamaican Rice and Beans. I got a lot of organic chicken thighs during the Harris Teeter Super Doubles this week for a great price.
So, I am slow-cooking two packages tonight to eat for dinner, then will make another meal this week with the leftover meat. If you haven’t tried chicken thighs, they are so tasty! I will be changing this recipe up and bit and posting later, since I don’t have any chipotle peppers. Plus I use brown rice. For dessert, we will be doing a Shrek Sorbet since I have a huge clam shell of organic spinach to use!
