What's for Dinner: Grilled Lemon Pepper Chicken, Baked Sweet Potatoes and Green Salad

Tonight’s Dinner is…Grilled Lemon Pepper Chicken, Baked Sweet Potatoes and a green salad with homemade breadmachine rolls from the freezer.

I went to Harris Teeter this week and got a bunch of frozen chicken breasts on sale, so you will see lots of chicken over the next few weeks. In one of my previous Kitchen Prep Days I prepared TONS of sweet potatoes and breadmachine rolls.  So, tonight’s dinner is really easy.  Just unthaw the chicken and marinade in lemon juice, olive oil and lemon pepper spices, and cook the rolls and potatoes, then whip up a quick salad!

    I’m just telling you this as a friend….when you talk about something that you are taking from the freezer, it is ‘thaw’, not ‘unthaw’. The ONLY reason I know this is because I used to say the same thing until my Mother corrected me! 🙂
    So, I’m sure everyone knows exactly what you are saying, it just stands out to me because I used to say it too!!
    Please don’t take offense.
    I LOVE your blog! My sister and I look at it SEVERAL times a day!
    Thanks for all you do to help us, we (I) really need it!
