Tonight’s Dinner Idea is Pizza! Order from your favorite pizza place, serve up some store-bought, or if you want to make your own, here are my favorite pizza recipes:

    Ooh, pizza! Good plan! I’ve got some cauliflower hanging out in the fridge, I think I’ll make mine tonight with a cauliflower crust.

    Okie dokie! Here’s what we did last night (and it’s very flexible):

    2 cups grated cauliflower..rice sized bits (I chop mine in the food processor)
    1 egg
    1 c. mozzarella cheese
    1 t. oregano
    1 t. minced garlic
    1 t. onion powder

    Preheat oven to 450. Line a cookie sheet with parchment paper, or spray with olive oil.
    Put the cauliflower in a microwave safe bowl. Microwave 7-8 minutes, no water needed 🙂
    Let it cool off.
    Mix together all ingredients.
    Spread onto prepared sheet– it works well as a relatively thin crust. I usually double it, and it’s enough for 3 grown-ups and a hungry toddler!

    Bake for 15 minutes. Top with desired toppings, and broil til cheese melts or bake til toppings are done– depends on what you like!

    We used your pizza margherita recipe, Kelly, and my 18 month old was scarfing it down like no tomorrow! Thanks 🙂
