I love this recipe http://tastykitchen.com/recipes/salads/raw-kale-salad-with-almonds-and-cranberries/ for Kale Salad. It’s a big hit with my teenage son as well because it’s a little sweet. The acidity of the lemon juice helps balance any bitterness in the kale.
I watch “Hungry Girl” all the time… and this is one of her Kale recipe swaps for potato chips.. hope you enjoy it!

OOOOOO!!!! I LOVE Kale and I’m not a fan of greens at all. It is great chopped and added to diced potatoes with some chicken broth, salt, pepper, and garlic and then baked until it’s all tender and yummy. It’s also great cooked in with some dried Navy Beans. Another great use is to toss it into some chicken broth with sausage, mushrooms, diced potatoes, garlic, and tomatoes to make a yummy soup. I’m sorry I don’t have precise measurements but I’m kinda a toss it together and roll the dice type of cook, Lol! If it looks good together, I give it a try!
You can pretty much replace spinach in most recipes with Kale, IMHO.
