What's-for-Dinner

Tonight’s Dinner Idea is Mini Meatloaf. A mini-sized meatloaf is the perfect portion size. They freeze well, and the kids seem to find anything I call “mini” immediately appealing! With a side of steak fries for the kiddos (also from the freezer) and generous garden salads for Bradford and me, this makes for another easy dinner this week.

    I love little food for kids. I’ve made meatloaf in my muffin pan for years and we have grown to prefer them that way because there is more crispy topping. I have a recipe for dill pickle meatloaf and it is fabulous too!
