Tonight’s Dinner is…Picnic Pasta. We had it this weekend on our date night out to a local vineyard where they had live music and you picnic on the lawn! It is perfect for that, or for a great meal at home.
I have lots of eggplant from our CSA, grilled chicken I can shred, and after the great deal I got on garbanzo beans yesterday at Whole Foods — I have all the ingredients on hand.
It is inspired by Melissa d’Arabian’s Picnic in a Jar, I changed it around a bit for our tastes, and I’ll be posting that later this week.
