Tonight’s Dinner is…Salmon BLT and a Pecorino Bean Salad.
I will do a recipe post of my Salmon BLT some time soon, hopefully this week! The bean salad looks amazing, but it was not an inexpensive meal, I was just really wanting to try it! I paid full price for the Pecorino cheese and edamame beans, but I don’t do that a lot and I think my husband will really enjoy it.
I also thawed out some frozen Tomatillo Salsa I made as a little appetizer while I was making dinner!
