Tonight’s Dinner is…Steak Fajitas in a Bowl. Since it is so beautiful and we have a freezer full of beef, we are going to marinade some of our grass-fed freezer beef (we bought a 1/4 cow a few weeks ago!) with my favorite Greek Marinade. Then chop it up to use in a fajita bowl. Yes, we just had it last week, but I could seriously eat this every day!
Oh, and I am thawing some of my organic bulk frozen tomatoes from the summer to whip up a yummy Easy Salsa Fresca.

Hey Kelly! I was just looking into Tap Root Farm in Franklin where you get your beef. My husband and I have talked about doing something like that for awhile but didn’t know this farm existed. So, thank you for sharing!! About how much does it cost? I saw that for 1/2 beef it’s about $90-$125 for processing but that’s just for processing (correct?)
Elizabeth, cost depends on the size of the cow your purchase. I can’t give you a quote, but I’d just recommend calling TapRoot. They are great and will answer all your questions!
