Does that look great, or what? It tastes as good as it looks. I got this recipe from Publix Apron’s Meals at the stand this week. It tasted so good I had to try it out. We try to watch our portions, so my husband and I split this and had a salad, mashed potatoes, and bread with it. My recipe below is very close to the Publix one, but I made a few changes to work with the ingredients I had on hand in my pantry.
This dish is so simple to make. However, it does not taste as easy as it is. It tastes like something that you really had to slave over–a real “special occasion” kind of meal. Don’t worry: If you decide to make it, we’ll keep its simplicity just between us. 😉

Skillet Sicilian Steak
1-2 lbs grilling steak (ribeye, NY strip, flat iron, flank, etc)
salt and pepper
2-3 Tablespoons olive oil, (reserve 2T for herb paste)
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
1/4 cup sliced green olives
1/2 of 14.5 oz can of diced tomatoes
Preheat a cast iron skillet or large pan on medium-high. Season steaks with salt and pepper.
Add about 1 tablespoon oil to the pan and add the steaks. Cook for about 3-5 minutes on each side (or 145 degrees F, medium-rare). Beware, this seriously smoked up my house. So you might consider doing this on the grill outside. You can just put the pan on the grill.
Combine seasonings and oil into a small bowl, and pour over steaks. Add tomatoes and olives into pan around steaks and heat through a few minutes.
Serve sliced in 1 inch strips topped with tomato and olive mixture!
I think I will try this with Italian diced tomatoes in my pantry. chicken would be a great substitue too.
My Nonna made something similar to this all the time! Italians call it Pizzaiola only we make it with thinner steaks, like the ones for brasciole.
