Sauteed Kale

Our first taste of kale came about 3 years ago when we enrolled in a local CSA (Community Supported Agriculture), we bought a share in a local organic farm. There was quite a bit of kale offered throughout the year, and I grew to absolutely love it. Not only do I love the taste, but it is absolutely packed with nutrients. It is close to one of the most nutrient dense foods you can eat.

Not only is it healthy, but it is pretty inexpensive.  I can usually get a large bunch for under $2 at the grocery store. With just a few simple ingredients, you can turn this into simple side dish for any meal.

There are so many ways you can eat kale, here are a few of my top picks, but my all time favorite is sauteed.

  • Kale Chips
  • Kale and Bean Ragout
  • White Bean and Kale Soup

Sauteed Kale

1-2 lbs of kale (washed, chopped and stems removed)
1 red onion, sliced
2-3 garlic cloves, minced
1-2 tablespoons olive oil
sea salt and fresh ground black pepper
1/2 cup chicken stock
red wine vinegar

Heat a large saute pan and add garlic and onion.  Cook until onion is translucent or soft. Add kale and toss.  After 10 minutes add chicken stock, and cover.  Simmer for about 10 more minutes.

Serve garnished with red wine vinegar.
